Authentic Biriyani Masala Powder

- 2 cinnamon sticks (3 inches each)
- 2 tablespoons fennel seeds
- 1 tablespoon cardamom pods
- 1 tablespoon black peppercorns
- 1 tablespoon cloves
- 1 tablespoon cumin seeds
- 2 dried bay leaves
- 1 teaspoon turmeric powder
- 1 teaspoon nutmeg powder
- 1 teaspoon mace powder
- 1 teaspoon dried rose petals (optional)
- 1 teaspoon dried mint leaves (optional)

Heat a dry skillet over medium heat. Add cinnamon sticks, fennel seeds, cardamom pods, black peppercorns, cloves, and cumin seeds. Toast for 2-3 minutes until fragrant.
