Garlic Herb Pork Chops with Creamy Mushroom Gravy

- 4 bone-in pork chops
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 oz mushrooms, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1/2 cup heavy cream
- Fresh parsley, chopped (for garnish)

In a bowl, combine minced garlic, dried thyme, dried rosemary, salt, pepper, and olive oil. Rub the mixture onto both sides of the pork chops. Let it marinate for at least 30 minutes.

In a large skillet, heat some olive oil over medium-high heat. Cook the pork chops for about 4-5 minutes on each side, or until they are browned and cooked through. Remove from the skillet and set aside.
