- 1 inch ginger root, finely grated
- 1/2 teaspoon yeast nutrient
- 1/4 teaspoon wine yeast (champagne or mead yeast)
- Zest of 1 lemon
- Zest of 1 lime
steps
- 1.
In a large pot, bring the water to a boil and stir in the honey until fully dissolved. Remove from heat.
- 2.
Allow the honey-water mixture to cool to room temperature.
- 3.
Once cooled, transfer to a sanitized fermentation vessel.
- 4.
Add the lemon and lime purées, grated ginger, yeast nutrient, and zests. Mix well.
- 5.
Sprinkle the wine yeast over the top and gently stir to incorporate, being careful not to splash.
- 6.
Seal the fermentation vessel with an airlock and place it in a cool, dark area for fermentation (about 2-4 weeks).
- 7.
Once fermentation is complete, siphon the mead into clean bottles, leaving sediment behind.
- 8.
Cap or cork the bottles and let them age for at least 1 month before tasting for best flavor development.
- 9.
Serve chilled, and enjoy the refreshing, citrusy goodness!
