- 10 cups fresh apricots, halved and pitted
- 4 ½ cups granulated sugar
- 1 tsp yeast nutrients
- 1 ½ tsp acid blend
- ½ tsp pectic enzyme
- 4 tsp tannin
- Water (to make up to 1 gallon)
- 1 packet wine yeast

Begin by thoroughly washing the apricots, then halve and pit them.

In a sanitized fermentation vessel, combine the apricots and 4 cups of water, mashing lightly to release the juices.

Stir in the granulated sugar until fully dissolved.

Top up the mixture with additional water to reach 1 gallon.
