ingredients
- 4 cups dandelion flowers
- 2 cups fresh citrus juice
- 2 cups Bearded Tree Wildflower Honey
- 1 gallon apple juice
- 1 packet Lalvin ICV D-47 champagne yeast
- 1 campden tablet
steps

Collect dandelion flowers, making sure they are pesticide-free.
- 2.
Boil 1 gallon of apple juice and let it cool to room temperature.
- 3.
Add dandelion flowers, citrus juice, and wildflower honey to the apple juice.
- 4.
Crush the campden tablet and dissolve it in the mead mixture.
- 5.
Sprinkle the champagne yeast over the mixture and cover with a cheesecloth.
- 6.
Let it ferment for 2 weeks, stirring daily.
- 7.
After fermentation, strain out solids and transfer to a carboy to age for 3 months.
- 8.
Bottle and let it age for an additional 4 months before enjoying.
