10 Barrel Mead Base
"**Mead Name:** 10 BBL Mead Base **Mead Type:** HIGH GRAVITY### Ingredients:- **Honey:** 750 lbs of cost-effective honey- **Yeast:** 1500g LALLEMAND LALBREW CBC-1 - CASK & BOTTLE CONDITIONING YEAST (*Rehydration is suggested*)- **Nutrients:** 2500g YEASTLIFE O™, POTASSIUM BICARBONATE AS NEEDED FOR pH BUFFER### Process:1. Heat 10 bbls of water in the kettle.2. Add the honey and mix thoroughly until dissolved.3. Boil for 20 minutes.4. Cool to 70°F through a heat exchanger and oxygenate while sending to the fermentor.5. Add yeast to the fermentor, and ferment between 70°F-75°F until complete.6. If needed, filter the mixture through carbon filter sheets or utilize activated carbon to remove unwanted compounds.7. Add de-aerated water to the filtered mead in the brite tank to adjust ABV if required, then carbonate to 2.75 vol/CO2.8. Add acids, stabilizers, flavors, and sweeteners as needed and continue carbonation to 2.8-3.0 vol/CO2.### Specifications:- **ABV:** 15% (can be adjusted as needed based on honey concentration)- **Original Gravity (OG):** 23.3 Plato- **Final Gravity (FG):** -4.4 Plato- **SRM (Color):** N/A### Pro-tips:- Check gravity at end of boil and adjust with more honey or water if needed.- Use food-grade acid to adjust pH after blending to taste.- Do not blend acids and stabilizers prior to adding them to the tank for safety.This recipe will produce a rich mead base that can be further adjusted or flavored post-fermentation to achieve the desired taste profile."
