- 750 lbs of cost-effective honey
- 1500g LALLEMAND LALBREW CBC-1 yeast
- 2500g YEASTLIFE O™
- Potassium bicarbonate (as needed for pH)
- Water (for dilution and fermentation)

- 1.
Heat 10 bbls of water in the kettle to around 160°F.
- 2.
Slowly add the honey to the water, stirring until fully dissolved.
- 3.
Bring the mixture to a boil, maintaining for 20 minutes to sterilize.
- 4.
Cool the mixture to 70°F via heat exchanger, ensuring to oxygenate effectively.
- 5.
Transfer the cooled honey-water mixture to a fermentor and sprinkle in the rehydrated yeast.
- 6.
Allow fermentation to occur at 70°F-75°F until fermentation ceases (check gravity readings).
- 7.
If necessary, filter through carbon filter sheets or use activated carbon to clarify.
- 8.
In the brite tank, add de-aerated water to adjust ABV, then carbonate to 2.75 vol/CO2.
- 9.
Incorporate acids, flavors, and sweeteners to taste, and continue carbonation until reaching 2.8-3.0 vol/CO2.
