- 1 gallon water
- 2 cups raw honey
- 1 tablespoon grated fresh ginger
- 1 vanilla bean (or 1 tablespoon vanilla extract)
- Juice and zest of 2 fresh lemons
- 1/4 teaspoon yeast (champagne or mead yeast)
- A pinch of cinnamon (optional)

In a large pot, bring the water to a boil and remove from heat.
