ingredients
- 3 lbs raw honey
- 1 gallon water
- 2 cups fresh lemon juice
- 1 packet champagne yeast

Heat water in a large pot until warm, not boiling.

Stir in raw honey until dissolved.

Add lemon juice and mix well.

Let cool to room temperature.

Transfer mixture to a clean fermentation vessel.
