A fresh and flavorful salad with grilled shrimp, ripe tomatoes, crisp cucumbers, tangy feta cheese, and zesty lemon dressing. Perfect for a light and healthy meal!
ingredients
- 1 lb. large shrimp, peeled and deveined
- 1 tbsp. olive oil
- 1 tsp. oregano
- 1/2 tsp. garlic powder
- Salt and black pepper, to taste
- 4 cups mixed salad greens
- 1 large tomato, chopped
- 1/2 English cucumber, sliced
- 1/2 red onion, sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup Kalamata olives, pitted
- 1/4 cup chopped fresh parsley
- 1 lemon, juiced
- 3 tbsp. olive oil

Preheat grill to high heat.

In a bowl, toss shrimp with olive oil, oregano, garlic powder, salt, and black pepper.

Grill shrimp for 2 - 3 minutes on each side, until pink and fully cooked.

In a large salad bowl, combine mixed greens, tomato, cucumber, red onion, feta cheese, olives, and parsley.

In a small bowl, whisk together lemon juice and olive oil to make dressing.
- 6.
Add grilled shrimp to the top of the salad and drizzle with dressing.
- 7.
Serve and enjoy!
