Creamy, cheesy mac and cheese that satisfies cravings without the guilt. Made with low-carb pasta and Greek yogurt, this dish is high in protein and low in calories.
ingredients
- 8 oz. low-carb pasta
- 1 cup plain Greek yogurt
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp. unsalted butter
- 1 tbsp. all-purpose flour
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- Salt and pepper to taste
- Optional: chopped parsley for garnish

Preheat oven to 375°F

Cook pasta according to package instructions, drain and set aside

In a saucepan, melt butter over medium heat

Whisk in flour and cook for 1-2 minutes until it turns into a paste

Add in garlic powder, paprika, salt and pepper
- 6.
Slowly whisk in Greek yogurt
- 7.
Stir in cheddar and mozzarella cheese until completely melted
- 8.
Add pasta to the cheese sauce and mix well
- 9.
Pour mixture into a baking dish and bake for 10-15 minutes until golden and bubbly

Optional: sprinkle chopped parsley on top
