Vegan Stout Stew with a Meatless Twist
ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 8 ounces meatless ground beef substitute
- 8 ounces meatless sausage substitute, sliced
- 1 tablespoon tomato paste
- 2 cups vegetable broth
- 1 cup stout beer
- 2 teaspoons brown sugar
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce

Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant.

Add carrots, potatoes, meatless ground beef substitute, and meatless sausage substitute. Cook for 5 minutes, stirring occasionally.

Stir in tomato paste until well combined. Pour in vegetable broth, stout beer, Worcestershire sauce, brown sugar, thyme, and bay leaf.

Bring to a boil, then reduce heat and simmer for 30 minutes or until the vegetables are tender.

Season with salt and pepper. Remove the bay leaf before serving.
