Hearty Italian Stufatto
" Italian Stew (Stufatto). Ingredients 1. 2 pounds of stewing beef, veal, or lamb 2. 4 tbsp olive oil 3. 2 carrots 4. 2 stalks celery 5. 2 large onions 6. 1 green pepper 7. 3 cloves garlic 8. Herbs (fresh if possible): basil, parsley, oregano 9. 4 large potatoes 10. 1 can peas (medium size) 11. salt and pepper to taste 12. 1 medium can of tomato sauce Season meat with salt and pepper then sauté in olive oil until brown. Add garlic and stir, then add onion and stir. Blend in tomato sauce. Add chopped herbs and cook for 5 minutes. Add sliced carrots, celery, and green pepper, and let simmer for 1 ½ hours. Stir occasionally, checking that ingredients are submerged in sauce. Add potatoes and let cook until fork tender. Add can of drained peas and let cook for ½ hour longer. All the meats need checking, as they may cook in more or less time. Serves 4-5."
