Hearty Beef Stew with Rice

- 1.5 pounds beef, cubed
- 2 large carrots, peeled and chopped
- 2 medium potatoes, peeled and diced
- 1 large tomato, chopped
- 2 tablespoons tomato paste
- 2 baby marrows, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 1 cup white rice
- Fresh parsley, chopped (for garnish)

In a large pot, heat some oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove and set aside.

In the same pot, add the onions and garlic. Sauté until they turn translucent.

Add the tomato paste and cook for a minute. Then, add the chopped tomatoes, carrots, potatoes, baby marrows, and beef cubes back to the pot.

Pour in the beef broth, and season with thyme, paprika, salt, and pepper. Drop in the bay leaf.
