- 1 lb seitan, cut into large chunks
- 4 medium carrots, chopped
- 3 medium potatoes, cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup red wine (or more broth)
- 2 tbsp soy sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp rosemary
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 tbsp cornstarch (optional, for thickening)
- Fresh parsley, for garnish

In a large skillet, heat olive oil over medium-high heat and sear the seitan pieces until browned on all sides.

Transfer the seitan to a slow cooker and add the chopped carrots, potatoes, onion, and garlic.
