Savory Vegetarian Irish Stew
ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 large carrots, sliced
- 3 turnips, cubed
- 2 cups mushrooms, sliced
- 1 cup frozen peas
- 4 cups vegetable broth
- 1 cup Guinness stout
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce (or vegan alternative)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

In a skillet, heat olive oil over medium heat and sauté onions until translucent.

Add garlic and continue to sauté for another minute until fragrant.

In the crock pot, combine sautéed onions and garlic with carrots, turnips, mushrooms, and peas.

In a bowl, whisk together vegetable broth, Guinness, tomato paste, Worcestershire sauce, thyme, smoked paprika, salt, and pepper.

Pour the liquid mixture over the vegetables in the crock pot, ensuring everything is well-coated.

Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.

Once done, taste and adjust seasoning if necessary.

Garnish with fresh parsley before serving.
