Herb-Infused Spatchcock Sous Vide Turkey

- 1 whole spatchcock turkey (12-14 pounds)
- 1 lemon, sliced
- 1 orange, sliced
- 1 onion, sliced
- 6 cloves garlic, smashed
- 4 sprigs rosemary
- 8 sprigs thyme
- 1 tablespoon sage leaves, chopped
- 4 tablespoons butter, softened
- Salt and black pepper to taste
- Olive oil for browning

Preheat the sous vide bath to 150°F (65°C).

Rinse and pat dry the spatchcock turkey, then season generously with salt and pepper.

Place half of the lemon, orange, onion, garlic, rosemary, and thyme on a large baking sheet and place the spatchcock turkey on top.

In a small bowl, combine the chopped sage leaves with softened butter, then spread the herb butter all over the turkey.

Cover the baking sheet with aluminum foil and seal it tightly.

Place the foil-wrapped spatchcock turkey in the preheated sous vide bath and cook for 3-4 hours.

Once cooked, carefully remove the turkey from the foil and pat dry with paper towels.

Preheat the oven to 450°F (230°C).

Brush the spatchcock turkey with olive oil and place it on a roasting rack in a roasting pan.

Roast the spatchcock turkey in the oven for 20-30 minutes or until the skin turns golden brown and crispy.
