ingredients
- 2 lbs rabbit, cut into pieces
- 1 cup white wine
- 2 cups chicken broth
- 4 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped

Season rabbit pieces with salt and pepper.

In a large Dutch oven, heat olive oil over medium-high heat.

Add rabbit pieces and brown on all sides, then remove and set aside.

In the same pot, add onions, carrots, celery, and garlic. Cook until softened.

Pour in white wine, chicken broth, thyme, and rosemary.

Return rabbit to the pot, reduce heat, cover, and simmer for 1.5 hours.
