- 1.25 Gallon Water
- 4 pounds Monarch's Choice Wildflower Honey
- Irish moss Finings
- Yeast Nutrient
- Acid Blend
- Wine Tannin
- ½ pkg Wyeast 4184 Sweet Mead Yeast

Boil water, add honey and Irish moss, simmer for 10 minutes.
- 2.
Cool to 70°F, add yeast nutrient, acid blend, tannins, and yeast.
- 3.
Ferment for 2 weeks, then rack into a carboy for 2 months.

Bottle and age for 6 months for best flavor.
