- 1 lb. beef or chicken gyros
- 1 Tbsp. olive oil
- 2 cups cooked quinoa
- ½ red onion, chopped
- 1 orange, segmented
- 1 lemon, juiced
- 2 Tbsp. fresh parsley, chopped
- 1 Tbsp. fresh mint, chopped
- Salt and pepper, to taste
- Pita bread, for serving

Preheat the grill on high heat.

Brush gyro meat with olive oil and season with salt and pepper. Grill until fully cooked.

In a mixing bowl, combine cooked quinoa, chopped red onion, orange segments, lemon juice, parsley, and mint. Season with salt and pepper.
