Savory Chicken with Berry Mushroom Medley
ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 1 cup fresh blackberries
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- 1 teaspoon cornstarch (optional, for thickening)
- ½ cup chicken broth

Preheat the oven to 375°F (190°C).

Season chicken breasts with salt and pepper on both sides.

Heat olive oil in a large oven-safe skillet over medium-high heat.

Sear the chicken for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add sliced mushrooms and sauté for 3-4 minutes until softened.

Add blueberries, blackberries, honey, thyme, and chicken broth to the skillet. Cook for another 3-4 minutes until the berries are softened.

If you desire a thicker sauce, mix cornstarch with a tablespoon of cold water, and add it to the berry mixture. Stir to combine.

Return the chicken to the skillet, spooning the berry mushroom sauce over it.

Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F).

Let the chicken rest for 5 minutes before serving, drizzled with the berry mushroom sauce.
