- 1 gallon strained kiwi puree
- 2 gallons apple juice
- 1 gallon water
- 3 cups cane sugar
- 6 lbs clover honey
- 6 tsp acid blend
- 1 ½ tsp yeast nutrient
- 3 Campden tablets
- Champagne yeast

Begin by preparing the kiwi puree; peel and blend ripe kiwis until smooth, then strain to remove seeds.

In a large fermentation vessel, combine the kiwi puree, apple juice, and water. Stir to mix thoroughly.

In a separate bowl, dissolve the cane sugar and clover honey in a small amount of warm water, then add to the mixture.

Add the acid blend and yeast nutrient, stirring well to ensure everything is incorporated.

Crush the Campden tablets and add them to the mixture to prevent unwanted wild yeast; allow to sit for 24 hours.

After 24 hours, sprinkle the Champagne yeast over the surface of the mixture and stir gently.

Cover the fermentation vessel with an airlock, allowing the mixture to ferment in a dark, cool area for about 4 to 6 weeks.

Once fermentation is complete, siphon the beverage into clean, sanitized bottles and refrigerate. Serve chilled!
