ingredients
- 1.5 lbs lamb shoulder, cut into bite-sized pieces
- 1 cup fresh mint leaves, packed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoons lemon juice
- 3 tablespoons vegetable oil
- Salt to taste
- Fresh coriander for garnish
steps
- 1.
In a blender, combine mint leaves, garlic, ginger, lemon juice, and a pinch of salt; blend into a smooth paste.
- 2.
In a large bowl, mix lamb pieces with the mint paste, ensuring all pieces are well coated; marinate for at least 1 hour (or overnight for deeper flavor).
- 3.
Heat oil in a large skillet over medium heat; add cumin seeds and let them sizzle.
- 4.
Add chopped onions and green chilies; sauté until onions are golden brown.
- 5.
Stir in the marinated lamb, along with any remaining mint paste; cook on medium-high heat for 5-7 minutes until the meat is browned.
- 6.
Sprinkle in turmeric, coriander, and salt; sauté for a couple of minutes.
- 7.
Reduce heat, cover, and let it simmer for about 45 minutes until the lamb is tender, stirring occasionally.
- 8.
Add garam masala towards the end and mix well; garnish with fresh coriander before serving.
