- 3.5 lbs (1.6 kg) of orange blossom honey
- 1 gallon (3.8 L) of filtered water
- 1 oz (28 g) of dried culinary lavender flowers
- 1 packet of Lalvin 71B-1122 yeast
- 1 tsp yeast nutrient
- 1 tsp yeast energizer

In a large pot, warm the filtered water without boiling.

Stir in the orange blossom honey until fully dissolved, creating the must.

Remove from heat and allow the must to cool to around 70°F (21°C).

Prepare the lavender by steeping it in a cup of boiling water for 10 minutes. Strain and add the lavender infusion to the must.

Add the yeast nutrient and yeast energizer, stirring gently to combine.
- 6.
Once the must has cooled to the right temperature, sprinkle the Lalvin 71B-1122 yeast over the surface.

Cover the pot with a clean cloth or airlock and let it ferment for about 2 weeks in a dark, warm place (around 68-72°F or 20-22°C).

After fermentation slows, siphon the mead into a sanitized carboy, leaving sediment behind.

Let the mead age for at least 4-6 weeks for optimal flavor development.
