- 96 oz Welch's Red Grape Juice
- 2-1/2 lbs Monarch's Choice Wildflower Honey
- 4 oz Dutch Gold Buckwheat Honey
- 1/4 cup Sugar
- Juice of 1/4 Lemon (or 1-1/2 tsps Lemon Juice)
- Juice of 1 Orange (or 2 oz Orange Juice)
- 1/4 tsp Pectic Enzyme
- 1/2 tsp Yeast Nutrient
- 1/4 pkg Nottingham Ale Yeast or Safale S-04 Ale Yeast
- Filtered, Spring, or Rain Water (to make up 1 gallon)

In a fermentation vessel, combine all ingredients except the yeast nutrient and yeast.

Add water until the total volume reaches 1 gallon, accounting for any displacement.

Sprinkle in 1/4 tsp of yeast nutrient and mix gently.

Pitch the yeast into the mixture.
- 5.
Allow to ferment for 3 weeks in the primary fermentation.
- 6.
On day 3, add the remaining 1/4 tsp of yeast nutrient.

After primary fermentation, transfer to a secondary vessel to age for 4 weeks.
