- 96 oz Welch's Red Grape Juice
- 2-1/2 lbs Monarch's Choice Wildflower Honey
- 4 oz Dutch Gold Buckwheat Honey
- 1/4 cup Sugar
- Juice of 1/4 Lemon (or 1-1/2 tsps Lemon Juice)
- Juice of 1 Orange (or 2 oz Orange Juice)
- 1/4 tsp Pectic Enzyme
- 1/2 tsp Yeast Nutrient
- 1/4 pkg Nottingham Ale Yeast or Safale S-04 Ale Yeast
- Filtered, Spring, or Rain Water (to make up 1 gallon)

Combine all ingredients except yeast nutrient and yeast in a fermentation vessel.
- 2.
Add water to reach 1 gallon, accounting for displacement.
- 3.
Add 1/4 tsp of yeast nutrient.
- 4.
Pitch the yeast.
- 5.
Ferment for 3 weeks in primary fermentation.
- 6.
Add remaining 1/4 tsp of yeast nutrient on day 3.
- 7.
Transfer to secondary fermentation vessel and age for 4 weeks.
