Spiced Lentil Medley with Roasted Veggies

- 1 cup cooked lentils
- 1 bell pepper, sliced
- 1 red onion, thinly sliced
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped, for garnish

Preheat the oven to 400°F (200°C).

In a large bowl, combine the sliced bell pepper and red onion. Drizzle with olive oil and toss until evenly coated.

Spread the vegetables on a baking sheet and roast in the preheated oven for 25-30 minutes until they turn golden brown and tender.

Meanwhile, heat a small pan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

In a separate pan, combine the cooked lentils, roasted vegetables, and sautéed garlic. Mix well.

Add the ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, and pepper. Stir to coat the lentils and vegetables evenly.

Cook over medium heat for 5 minutes to meld the flavors together.

Squeeze the lemon juice over the mixture and give it a final stir.

Serve the Spiced Lentil Medley hot, garnished with fresh chopped parsley.
