ingredients
- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- Salt and pepper, to taste
- 4 medium-sized potatoes, cubed
- 4 cloves garlic, whole
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- Fresh parsley, for garnish
steps
- 1.
Preheat the oven to 400°F (200°C).
- 2.
In a bowl, combine lemon juice, lemon zest, olive oil, minced garlic, parsley, oregano, thyme, salt, and pepper. Mix well.
- 3.
Place the chicken breasts in a shallow dish and pour the marinade over them. Ensure the chicken is well coated and let it marinate for 15 minutes.
- 4.
While the chicken marinates, in a separate bowl, toss the cubed potatoes and whole garlic cloves with vegetable oil, paprika, salt, and pepper until evenly coated.
- 5.
Spread the potatoes and garlic cloves on a baking sheet in a single layer and roast for 30 minutes or until golden and crispy, turning once halfway through.
- 6.
Heat a large skillet over medium-high heat. Remove the chicken from the marinade (discard the remaining marinade) and cook for about 5-6 minutes per side, or until cooked through and golden brown.
- 7.
Serve the chicken alongside the crispy garlic potatoes. Garnish with fresh parsley and serve hot.
