Lemon Herb Chicken with Quinoa

- 1 lemon, zest and juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup quinoa
- 2 cups chicken broth
- Fresh parsley, for garnish

In a small bowl, whisk together the lemon zest, lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
