Tender lemon herb grilled chicken with a refreshing quinoa salad filled with cucumbers, tomatoes, and feta cheese. A perfect summer dish bursting with flavors!
ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup quinoa
- 1 1/2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped for garnish

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.

Cook quinoa according to package instructions. Once cooked, fluff with a fork and let cool.
