Juicy shrimp marinated in herbs and lemon, served over fragrant herb-infused rice.
ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup long-grain white rice
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 cups chicken broth
- Fresh basil leaves for garnish

In a bowl, combine shrimp with olive oil, lemon juice, lemon zest, garlic, oregano, basil, parsley, salt, and pepper. Let marinate for 30 minutes.

In a pot, heat olive oil and sauté rice for 2 minutes. Add chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.

Heat a skillet over medium-high heat, add shrimp and marinade, and cook for 3-4 minutes per side until shrimp is pink and cooked through.

Fluff the rice with a fork and stir in chopped parsley.

Serve shrimp over a bed of herb-infused rice, garnish with fresh basil leaves.
