ingredients
- 3 pounds alfalfa honey
- 5 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 cup water
- 1/2 cup fresh lemon juice
- 1/4 teaspoon cinnamon
- 1/2 teaspoon yeast nutrient
- 1 packet wine yeast
- 1/4 teaspoon potassium sorbate (optional for stabilization)

In a large saucepan, combine 1 cup of water and alfalfa honey, heating gently until fully dissolved, then remove from heat.

In a separate bowl, mash the mixed berries lightly to release their juices, then add them to the honey-water mixture.

Stir in the fresh lemon juice, cinnamon, and yeast nutrient, mixing well.

Allow the mixture to cool to room temperature, then transfer it to a sanitized fermentation vessel.

Add the wine yeast and mix gently. Seal the vessel with an airlock and set aside in a cool, dark place for about 2-4 weeks.

Once fermentation is complete, siphon the mead into a new vessel while leaving sediments behind. If stabilizing, mix in potassium sorbate now.

Age the mead in bottles for at least 2-3 months to enhance its flavors.
