Enjoy the citrusy flavor of lemon in all-natural vegan bars made with cashew butter, honey, and gluten-free oats, topped with toasted coconut and walnuts.

- 1 cup gluten-free oats
- 1 cup cashew butter
- ⅓ cup honey
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ cup unsweetened shredded coconut
- ½ cup chopped walnuts
- 1 tsp vanilla extract

Preheat oven to 350°F. Line an 8x8 inch baking dish with parchment paper.

In a mixing bowl, combine oats, cashew butter, honey, lemon juice, lemon zest, and vanilla. Stir until well mixed.

Press the mixture evenly into the baking dish. Bake for 14-16 minutes or until golden brown.
- 4.
Remove from oven and sprinkle coconut and chopped walnuts on top. Press them lightly into the bars.
- 5.
Let cool for 5 minutes and cut into 12 bars. Serve and enjoy.
