Lemony Coconut Loaf
ingredients
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/4 cup coconut oil, melted
- 1 egg
- 1/4 cup lemon juice
- Zest of 1/2 lemon
- 1/4 cup coconut milk
- 1/4 cup coconut flakes (for topping)

Preheat oven to 350°F and grease a loaf pan.

Mix flour, baking powder, baking soda, salt, and shredded coconut in a bowl.

Whisk sugar, coconut oil, egg, lemon juice, zest, and coconut milk in another bowl.

Combine wet and dry ingredients until just mixed.
- 5.
Pour batter into the loaf pan and top with coconut flakes.
- 6.
Bake for 25-30 minutes until a toothpick comes out clean.

Let cool before slicing and serving.
