Tender chicken, fluffy rice, and fragrant herbs in a zesty lemon sauce.
ingredients
- 1.5 lbs boneless, skinless chicken breasts, diced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried parsley
- Salt and pepper, to taste
- Lemon slices, for garnish
- Fresh parsley, for garnish

Preheat oven to 375°F.

In a bowl, whisk together lemon juice, olive oil, garlic, thyme, oregano, parsley, salt, and pepper.
