ingredients
- 5 gallons water
- 10 lbs Honey
- 2 packets Red Star Cote des Blancs Yeast
- 1 Medium Toast American Oak Spiral
- 2 x 32 oz Grade A Vermont Maple Syrup
steps
- 1.
Heat water to 160°F, add maple syrup
- 2.
Dissolve honey in water, cool to 70°F
- 3.
Pitch yeast, ferment in primary for 2 weeks
- 4.
Transfer to secondary with oak spiral for an additional 2 weeks
- 5.
Age for 4-6 months, then bottle and age for 6 more months
