ingredients
- 1 gallon water
- 2 lbs raw honey
- 1 cup pure maple syrup
- 1 cup roasted pecans, chopped
- 1 packet mead yeast (such as Lalvin D47)
- 1 teaspoon yeast nutrient
- 1 tablespoon cinnamon (optional)
- 1 teaspoon vanilla extract (optional)
steps
- 1.
Boil 1 gallon of water in a large pot, then remove from heat.
- 2.
Whisk in the honey and maple syrup until fully dissolved, creating a sweet must.
- 3.
Allow the must to cool to room temperature.
- 4.
Stir in the roasted pecans, yeast nutrient, cinnamon, and vanilla (if using).
- 5.
Sprinkle the mead yeast over the surface of the must, allowing it to hydrate for about 15 minutes before stirring gently to combine.
- 6.
Pour the mixture into a sanitized fermentation vessel, leaving space for expansion.
- 7.
Seal the vessel with an airlock and place it in a dark, cool location.
- 8.
Ferment for 4 to 6 weeks, checking periodically until bubbling has slowed.
- 9.
Once fermentation is complete, siphon the mead into sanitized bottles, leaving behind sediment.
- 10.
Age the mead for at least 2 months in the bottle to enhance flavors before indulging.
