Braised Mediterranean Lamb Burrito Sensation
ingredients
- 1 lb lamb shoulder, cut into chunks
- 2 tsp garlic powder
- 2 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 4 large flour tortillas
- 1 cup hummus
- 1 cup tzatziki sauce
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup feta cheese, crumbled
- 4 cups frozen fries
- 2 tbsp olive oil
- Fresh parsley, for garnish

Preheat the oven and prepare the fries according to package instructions, until crispy.

In a large pot, heat a bit of olive oil over medium-high heat. Sear the lamb chunks until browned on all sides, about 5-7 minutes.

Reduce the heat, add garlic powder, cumin, smoked paprika, salt, and pepper, stirring to coat the lamb.

Add enough water (or broth) to cover the lamb and bring to a simmer. Cover and cook on low heat for about 1.5 to 2 hours, until the lamb is tender and easily shredded.

In a bowl, mix cherry tomatoes, cucumber, and feta cheese with olive oil; toss gently to combine.

Lay a tortilla flat and spread ¼ cup of hummus over it. Add a generous portion of the braised lamb, then ¼ cup of tzatziki, followed by a handful of the tomato-cucumber-feta salad.

Fold in the sides and roll up tightly to form a burrito. Repeat with remaining tortillas and filling.

Serve warm, garnished with fresh parsley, alongside crispy fries for a complete meal.
