Instant Pot Mediterranean Cod and Rice
ingredients
- 2 cod fillets (6 oz each)
- 1 cup long-grain brown rice
- 2 cups low-sodium vegetable broth
- 1 cup diced tomatoes (canned or fresh)
- ¼ cup sliced black olives
- 2 tbsp chopped sun-dried tomatoes
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp red pepper flakes
- Salt and pepper to taste

Rinse the rice under cold water and drain.

In the Instant Pot, select the sauté function and heat olive oil. Sauté garlic until fragrant.

Add the rice, vegetable broth, diced tomatoes, black olives, sun-dried tomatoes, oregano, basil, red pepper flakes, salt, and pepper to the Instant Pot.

Close the lid, select the rice cooking function, and set the timer for 30 minutes.

Meanwhile, season the cod fillets with salt and pepper and place them on a trivet inside the Instant Pot.

Pour 1 cup of water into the Instant Pot, close the lid, and select the steam function. Cook for 3 minutes.
- 7.
Once the rice and cod are cooked, carefully remove the cod fillets and pat dry.
- 8.
Heat a non-stick skillet over medium heat and sear the cod fillets for 2-3 minutes on each side until lightly browned.
- 9.
Spoon the Mediterranean rice onto plates, place the seared cod fillets on top, and drizzle with the tomato-based sauce from the Instant Pot.
