- 1 lb baby potatoes, halved
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small head of cauliflower, cut into florets
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)

In a large mixing bowl, combine the halved baby potatoes, chopped red and yellow bell peppers, and cauliflower florets.
