Hearty Turkey and Veggie Vermicelli Bowl

- 1 lb ground turkey
- 1 medium eggplant, diced
- 1 cup cherry tomatoes, halved
- 1 green bell pepper, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 oz vermicelli
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)

Preheat the oven to 400°F (200°C) and prepare a baking sheet.

Toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread on the baking sheet and roast for 20 minutes until tender.
