Mexican Chicken Enchilada Bake

Layers of tender shredded chicken, gooey cheese, spicy enchilada sauce, and soft tortillas baked to perfection. A flavorful and comforting twist on classic enchiladas that the whole family will love.
ingredients
- 2 cups shredded cooked chicken
- 1 can (10 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 2 cups shredded Mexican blend cheese
- 8 corn tortillas
- 1/2 cup chopped fresh cilantro
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste

Preheat the oven to 375°F and spray a 9x13-inch baking dish with cooking spray.

In a bowl, mix together shredded chicken, green chilies, chili powder, garlic powder, salt, and pepper.

Spread a thin layer of enchilada sauce on the bottom of the baking dish.

Layer 4 tortillas on top of the sauce, overlapping as needed.

Spread half of the chicken mixture over the tortillas.

Sprinkle 1/3 of the cheese on top of the chicken.

Repeat the layers starting with enchilada sauce, tortillas, chicken mixture, and cheese.

Top with the remaining tortillas, enchilada sauce, and cheese.

Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.

Let it cool for a few minutes, then sprinkle with fresh cilantro before serving.
