A hearty meatloaf made with textured vegetable protein, black beans, and Mexican seasonings. Perfect for a vegan, protein-packed meal.
ingredients
- 1 cup textured vegetable protein
- 1 can black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/2 cup salsa
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper

Preheat oven to 375°F.

In a large bowl, mix together TVP, black beans, breadcrumbs, salsa, chili powder, cumin, garlic powder, salt, pepper, onion, and bell pepper.

Transfer the mixture to a greased loaf pan and press down firmly.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

Allow to cool for a few minutes before slicing and serving.
