Coffee Cake Muffins

Fluffy and moist muffins infused with rich coffee flavor, topped with a buttery streusel and a hint of chocolate. Perfect for breakfast or afternoon tea!

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 2 tsp instant coffee granules
- 1/2 cup mini chocolate chipsFor the streusel topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tbsp unsalted butter, cold and cubed
- 1/4 cup mini chocolate chips

Preheat the oven to 375°F and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, dissolve the instant coffee in the milk. Add the melted butter and eggs, whisking until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the mini chocolate chips.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

In a small bowl, combine the flour, sugar, and cold butter for the streusel topping. Use your fingers to pinch the mixture together until it resembles coarse crumbs. Stir in the mini chocolate chips.

Sprinkle the streusel mixture evenly over the muffin batter.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
