- 2 lbs nectarines, chopped and pitted
- 4 cups honey (adjust to taste)
- 1 tsp yeast nutrients

- 1/4 tsp tannin
- 1 campden tablet (crushed)
- 1 gallon carboy
- 1 packet wine yeast

Add the yeast nutrients, pectic enzyme, tannin, and crushed campden tablet to the nectarines.

Pour the cooled honey syrup into the fermentation vessel and stir thoroughly to mix all ingredients.
