- 4 lbs wildflower honey
- 1 quart aseptic fruit puree (your choice of any fruit puree, such as raspberry or peach)
- 1 gallon filtered water
- 1 tsp yeast nutrient
- 1 packet mead yeast (such as Lalvin D-47 or EC-1118)
- 1/2 tsp Camden tablets (optional for sanitation)

In a sanitized fermentation vessel, combine the wildflower honey and filtered water, stirring until the honey is fully dissolved.

If using Camden tablets, crush them and add to the mixture for sanitation, allowing it to sit for 24 hours.

After sanitizing, add the aseptic fruit puree, stirring gently to incorporate.

Sprinkle the yeast nutrient over the mixture and stir to combine.

Rehydrate the mead yeast according to package instructions, then add it to the must (the mixture of honey, water, and fruit puree).

Seal the fermentation vessel with an airlock and place it in a cool, dark area, maintaining a temperature between 65°F and 75°F.

Allow the mead to ferment for about 4 to 6 weeks, or until fermentation activity slows.

Once fermentation is complete, siphon the mead into a sanitized bottling vessel, leaving sediment behind.

Bottle using sanitized bottles and corks or caps, and let age for at least 3 months to develop flavors.
