Nutty Autumn Mash

- 1 small sweet potato
- 1 small spaghetti squash
- 1 tablespoon olive oil
- 2 tablespoons unsalted almond butter
- ¼ cup chopped walnuts
- 1 tablespoon chopped parsley (optional garnish)

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Pierce the sweet potato a few times with a fork, place it on the baking sheet, and roast for 35-40 minutes or until tender. Let it cool.
