Nutty Quinoa Protein Bars

- 1/2 cup quinoa
- 1/2 cup oats
- 1/2 cup almond flour
- 1/4 cup vanilla protein powder
- 1/4 cup chopped almonds
- 1/4 cup chopped pistachios
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup unsweetened shredded coconut
- 1/4 cup maple syrup
- 1/4 cup water

Preheat oven to 350°F. Line an 8x8 inch baking dish with parchment paper.

Rinse quinoa and add to a saucepan with 1 cup of water. Bring to a boil, then reduce heat to low and simmer for 10-12 minutes.

In a large mixing bowl, combine cooked quinoa, oats, almond flour, protein powder, almonds, pistachios, pumpkin seeds, sunflower seeds, and shredded coconut. Mix well.

In a small saucepan, combine maple syrup and water. Heat over low heat until well combined, then pour over the dry ingredients and mix until well coated.

Transfer the mixture to the prepared baking dish and press down firmly. Bake for 20-25 minutes, or until the edges are golden brown.

Cool completely in the pan, then cut into 8 bars.
