Protein-Packed Quinoa Delight

This vegan protein quinoa recipe combines the goodness of soaked red cow peas and quinoa with a colorful medley of chopped carrots, onions, tomatoes, and green beans. Tossed in olive oil, lemon juice, and a hint of green chillies, this hearty dish is sprinkled with fresh coriander leaves for added freshness and flavor.
ingredients
- 1/4 cup soaked red cow peas
- 1/4 cup soaked quinoa
- 3-4 tsp chopped carrots
- 3 tbsp chopped onions
- 2 tbsp chopped tomatoes
- 1/4 cup chopped green beans
- 2 tsp olive oil
- 2-3 tsp lemon juice
- Salt to taste
- 1/4 tsp green chillies
- 2 tsp coriander leaves
- 2-3 cups of water

Rinse soaked red cow peas and quinoa under cold water.

In a saucepan, bring water to a boil and add soaked red cow peas. Cook until tender.

Add soaked quinoa to the same pan and cook for another 10-12 minutes until both ingredients are cooked through.

In a separate pan, heat olive oil and sauté chopped onions until translucent.

Add chopped carrots, green beans, and tomatoes, and cook for 5 minutes or until they are slightly tender.

Transfer the cooked red cow peas and quinoa to the pan with the sautéed vegetables.

Season with salt, green chillies, and lemon juice. Mix well.
