ingredients
- 4 boneless, skinless chicken breasts
- 1 cup basil pesto
- 2 cups fresh green beans, trimmed
- 2 cups fresh spinach
- 1 cup mozzarella cheese, shredded
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
steps
- 1.
Preheat the oven to 375°F (190°C).
- 2.
Season the chicken breasts with salt and pepper, then coat them in ½ cup of basil pesto, ensuring they are thoroughly covered.
- 3.
In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- 4.
Add the pesto-coated chicken breasts to the skillet and sear for 4-5 minutes on each side until golden brown.
- 5.
Remove the chicken from the skillet and set aside. In the same skillet, add the green beans and sauté for 3-4 minutes.
- 6.
Stir in the spinach and cook until wilted, about 2 minutes. Return the chicken to the skillet, spreading the veggies around, then top with shredded mozzarella.
- 7.
Bake in the oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
