Spinach and Feta Stuffed Chicken with Lemon Sauce

Tender chicken breasts filled with spinach and feta cheese, smothered in a zesty lemon sauce. Perfectly paired with roasted potatoes and a crisp green salad.

- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup breadcrumbs
- 1/4 cup shredded Parmesan cheese
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 1/4 cup flour, for dredging
- 2 tbsp olive oil
- 1 lemon, juiced
- 1/2 cup chicken broth
- 2 tbsp butter

Preheat oven to 375°F.

In a small bowl, mix together spinach, feta cheese, breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.

Cut a pocket in the thickest part of each chicken breast. Stuff with spinach mixture.

Dredge each stuffed chicken breast in flour.

In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts on both sides, until golden brown.

Transfer seared chicken to a baking dish and bake for 20-25 minutes, or until chicken is cooked through.

In the same skillet, add lemon juice and chicken broth. Simmer until reduced by half. Add butter and stir until melted.

Serve stuffed chicken breasts with lemon sauce and any additional sides.
